Fascinating.
I hope I will be allowed just a smidgen, though, of scepticism:  We have not seen the original Greek text (not that I, for one, would understand it).  Nor have we had a translation.  We have had an interpretation, with diagrams, of a translation of a copy of the original text.  It would be interesting to read through a translation, to see whether we of the IGKT forum would, based on Heraklas's written descriptions, come up with the same knots as the illustrator whose drawings are shown above.
